Theresa Nist and recipes might not sound like riveting news, but it might surprise you how well that sort of thing is received on social media. Golden Bachelor fans still love Gerry Turner’s ex, and her posts seem to mostly be sweet rather than controversial, which makes for a nice change.

The first time that the ABC alum shared a recipe, she made a few basic mistakes. But, Golden Bachelor fans were kind to her because it seemed like a new activity. She made some tasty-looking fall soup. But, she forgot to share the recipe. 

This week, she might have been forgiven if she also forgot the recipe again. That is because she might have her mind on her latest grandchild by her daughter, Joy Woolston. However, it seems that Gerry Turner’s ex only makes a mistake once and learns from it because this time there was a recipe.

The Golden Bachelor alum’s fall soup was of Italian origin, and so are the veggies that she enjoys. Or, at least, she likes to eat Mediterranean-style food. With Thanksgiving coming up soon, the ABC alum might have chosen the perfect time to share a super-simple but tasty recipe for roasted vegetables on her Instagram

Theresa Nist not only upped her recipe game with the ingredients listed, but she also told her ABC fans how to do each step. Here it is:

Here’s the recipe: heat the oven to 400°. Cut the vegetables flat as I did or into florets, if you prefer. Cover them evenly with olive oil and salt (add pepper, if you like). Bake 15 to 22 minutes until brown and crisp. When they’re done, you can squeeze some lemon juice over them and grated Parmesan cheese. Enjoy!

Gerry Turner’s ex also explained more about her preferred diet. The former Golden Bachelor told her ABC fans:

I mainly eat the Mediterranean diet, and a major food group in the Mediterranean diet is vegetables! And I eat a lot of vegetables… Here I am making some roasted broccoli, cauliflower and peppers. Nothing fancy, just simple, grilled vegetables with extra virgin olive oil and salt. So simple, yet so delicious!

In the comments section, fans seemed to like the recipe that Theresa Nist shared and a lot of them also love the tasty but simple way to prepare veggies. Here are a few comments:

  • Cabbage is really good this way as well. I slice it into “steaks” and add smoked paprika, salt, pepper and a little coconut oil. I roast it on my air fryer setting of my oven and it crisps up nicely.
  • The broccoli stalk is the best. I use a potato peeler to remove that hard covering. I almost like it better than the florets!
  • Roasted veggies is my favorite side dish. I especially love sweet potatoes and carrots. They caramelize and are so sweet. I also sprinkle a little of my “Cindy seasoning” on them: salt, pepper and garlic powder along with the olive oil. YUM!!!
